Bison Meat
Bison have adapted to the change in the worlds climate and have been found in North America for the past 10,000 years. Bison is a low fat meat and varies in tenderness dependent on the cut. Individual Bison cuts are identical to beef, except for its colour which is a deeper red.

Crocodile Meat
This meat has a low level of cholesterol and is exceptionally juicy and tender. The anatomy of the crocodile is similar to that of a bird and therefore similar in taste to chicken and turkey. It can be prepared in the same manor and is ideal for barbeques, roasting or grilling. Crocodile has quite a neutral taste and it is recommended that flavouring is used.

Kangaroo meat is tender, very high in protein, low in cholesterol (less than 2% fat) and deep red in color. It can be used in most beef and lamb recipes or served with a light sauce, however because of it leanness care must be taken to avoid overcooking.

Ostrich Meat, Eggs and Ice Cream
We offer a wide range of Over 14 Ostrich Products including Meat, Eggs and Ice Cream. Ostrich Meat is extremely low in cholesterol and very high in protein making it one of the healthiest red meats available. As the Ostrich does not fly it does not develop breast muscles. All the prime meat comes from the leg and the rump of the bird, although there is a substantial amount of meat on the neck which is ideal for stews and casseroles (treat as you would Oxtail).
