Osgrow Impala Meat

The Impala with its large ears, is one of the more common antelope and lives on the bush lands and plains. They can run at speeds of up to 60 kph and escape their predators by leaping a staggering eleven metres forwards and sideways.

Impala with Oyster Mushrooms and miniature Pumpkins

Ingredients (serves 4)
750g Osgrow Impala Steak or Fillet
250g Oyster Mushrooms,
the juice of half a Lime
4 x miniature Pumpkins
freshly ground Black Pepper
125ml Sea Salt
Brown Stock
medium Sherry

Method
Roast the pumpkins in the oven for about twenty minutes at a maximum of 180 C. In the meantime fry the seasoned impala until medium fried. While keeping the meat warm, brown the oyster mushrooms in the pan and quench with lime juice, sherry and stock.
